The last meal that we had at Blue Acre was phenomenal so we agreed that whenever we went through Seattle, we would stop by again. D and I rarely ever order the same main but this time, we both ordered the ciopinno as poor D, hardly got any the last time. I was looking forward to the best cioppino I had eaten but alas it was not to be. I think I should stop building up my expectations and just enjoy the meals as they come. Nonetheless it was a fun, fast and fussfree meal :)
Brunch is our favourite weekend treat. Not traveling too far, not having to wait too long for a seat or the food, good parking are a bonus. We decided to try out Tour de Feast in North Vancouver. It had recently opened and had good reviews. Tour de Feast is operated by a husband and wife team, service was great as there weren't too many tables. The chef is classical french trained and previously from Four Seasons - ok so far so good. When the food came, we were in for a treat :)

D had the 7 hour braised beef - a tad on the salty side but super tasty while I had the cassoulet. It had me at sausage, bacon, porkconfit. It was a hearty breakfast of soft poached eggs, white navy beans, weisswurst, sausage, lardon bacon, swiss, confit pork & carrot. It was tasty and well balanced with the side of salad and potatoes. Doesn't the food remind you of Cafe Regalade?

If you pass by from the outside, it looks very nondescript and you wouldn't even guess that there is a bistro there. Inside, it's a simple, casual atmosphere. Limited parking available at the rear.

The Reef serves Carribean food. It's the first time we're eating Carribean food so we decided on the sharing platter where we got a sampling of a lot of their appetizers and a jerk poutine while D had his usual brunch. We're no experts, the food was tasty but we found it way too salty for our liking. Between my local noodles and Carribean food - I'd pick Hawker's Delight anyday but that's just me.

After messing with a couple of recipes, we finally decided this was the keeper. It's a combination of Thomas Keller's Blow Torch Roast Beef recipe from his cookbook and the recipe from cookingforengineers.

D initially scoffed at using a blowtorch, but now he is won over by this recipe - Ha! I used a small blow torch, the type you use for creme brulee but having won D over, he promptly headed to Home Depot and got me a serious blow torch that burns hot hot hot!

Pick a nice cut of beef - we found rib eye roast, organic, hormone or antibiotic free meat the best tasting

Salt 3 days ahead and allow the beef to age in the refrigerator. You can skip this step and salt it a day ahead instead.

Add pepper and garlic infused olive oil before searing the outside with a torch.

Set oven to 200F.

Stick meat thermometer into the center of the roast.

Place in the middle of the oven till the thermometer reads 122F for an all round medium rare. (It takes about 3-3 1/3 hours for a 2.7-3kg roast)

Pull out roast and let rest for 15-20min tented. The temperature should rise another 2-3F.

Serve with horseradish cream, potatoes and a nice red wine.

We were craving waffles one day and D did a search on belgian waffles and came up with this recipe found here. We've chucked the other recipe out - oh wait D doesn't have a recipe, he does it by feel...little bit of self raising flour, 1 egg, little bit of milk till he reaches the right consistency. Anyways, this is THE waffle recipe, crisp on the outside, yet buttery soft on the inside. Re-creatable every time. Freezes well and bakes up pretty well too.
We started with the chopped scallop roll which was very fresh. Then we had the toro stack - I think it was super healthy with black brown rice. There was also a quail egg under that nori. With the combination of avocado, tuna, green onion, quail egg and unagi sauce, this was D's favorite dish.
I liked the crunch crunch roll. We were greedy and ordered the full size portion of 12 pieces. In hindsight, 2 of us could have easily been good with just 6 pieces. The chef arranged it in a heart shape...aw. Good thing it wasn't the first date. Crunch Crunch roll was yummy.
We started off with a couple of cocktails which we enjoyed immensely. They infuse their own syrups and alcohol so you'll find that they were all very unique.

We enjoyed the starters more than the mains but all in all a very enjoyable meal. Make sure you make reservations as this place gets packed. I also like that they are committed to sustainablity - they support local farms, fair trade coffee, chocolate, organic meats, no antibiotics - you get the idea.
Look no further, after trying microwaving and baking it at various temperatures, I finally found a recipe that I like and it comes from Alton Brown :) It is easy and not too involved, just leave it in the oven and walk away - it'll be hard as you will soon start to smell bacon and will be so tempted to peek. Resist - just set the timer and walk away. Remember to turn on the exhaust fan too!! Or if you love the smell of bacon then just let the yummy smell of bacon just waft through the house.

Line rimmed baking tray with tin foil. I used extra foil to raise the sides to avoid the splatter but there really wasn't that much splatter.

Place bacon on the tray, barely touching

Place tray on the middle rack in cold oven and heat over to 400F.

Once the oven reaches 400F, bake for another 17-20 min depending on how you like your bacon.

I like mine crispy so I typically bake it for 20min.

To start, we ordered a crabcake and mussels to share. Both were very fresh and flavourful.
This restaurant holds fond memories for D & I. Needless to say, the food is very good. When my brother and sis-in-law came to visit last summer, we did a roadtrip down to Seattle and Portland and had to revisit Pazzo. They loved it so much that we ended up having dinner there 2 nights in a row.

The place was bustling and the portions were well, snack sized. It was just nice to share for 4 people and 2 young kids - everyone had a bit of each dish, like a tasting menu. Since we had kids around, we avoided the raw stuff and focused on the cooked items. Everything was tasty but nothing was sooo outstanding that I'll come back again too soon.
One of the options you can choose at Chipotle is the cilantro lime rice, the first time that I tried it, I was hooked.

I'm not a fan of cilantro at all, in fact, if I could pick it out of the food, I would. However I think I'm beginning to warm up to Cilantro especially since my Mexican food craze. I find the cilantro lime rice very refreshing - my taste buds must be changing with my age.

Cilantro Lime Rice

1 cup rice
1 cup chicken stock (Can chicken broth should be fine too and you can probably skip the salt then)
1/4 tsp sea salt
2 tbsp lime juice
1 tbsp cilantro

Use the rice cooker to cook 1 cup rice. You can skip the chicken stock and sea salt to be healthier and just use white rice

Let rice cool slightly before adding lime and cilantro.

Mix well.

Corn Salsa

12oz can of corn
2 medium on the vine tomatoes or roma tomatoes
2 tbsp chopped red onion
1 tbsp chopped cilantro
1 chopped serrano pepper deseeded
3 tbsp lime juice
pinch of salt

Mix well 2 -4hrs ahead. You can also make it a day ahead. This is a very mild salsa and you can increase the serrano peppers for spiciness.
In my quest to recreate a Carnitas plate at home from scratch, I had to make salsa from scratch too. It is easy to do and healthy too! We tried the Fresh is Best Salsa which was pretty tasty but store bought just doesn't cut it anymore.

Anyone know if I should add chopped garlic too?
Salsa recipe

3 medium sized on the vine tomatoes or roma seeded and chopped
2 tbsp diced red onion
2 tbsp lime juice
1 tbsp chopped cilantro
1 serano pepper
pinch of salt

Mix it all together 2 - 4 hours in advance for the flavours to meld. I found that it was less spicy and more flavourful a day after. You can adjust the salt, lime and spiciness to your liking.
We just got back from a week of Mexican food and Carnitas at every available opportunity - what do I do? We not only head to Chipotle, which just opened in Vancouver, I crave it so much that I cook up a batch of Carnitas :) Mexican is my new favourite food. It's tasty, healthy and easy to cook. We lost weight eating Mexican on our trip and it definitely wasn't from eating light - never before.! You see why I'm sooo enamoured with Mexican food?
Carnitas

Ingredients:

3- 4 lbs pork shoulder collar butt (I used the Sakura Pork cuts from TnT, about 3 pieces)
1 Tbsp oil
3/4 Tbsp salt
1 tsp mexican chilli powder
1/4 tsp cinnamon
2 bay leaves
1/4 tsp cumin
3 cloves garlic smashed
2 cups chicken broth (canned chicken stock is also fine)

Directions:

Salt pork a day a head of time if possible, if not just before searing is fine too.

Heat 1 tbsp oil in dutch oven(I used a 3 1/2 qt). Sear each side of pork till nicely brown, about 2 min each side.

Pour chicken stock till pork is 3/4 covered. Simmer on stove top. Once it is simmering, cover with tin foil and cover with lid.

Heat oven to 300F. Put the pot on the middle shelf for 2 1/2 - 3 hours till fork tender.

Drain remaining liquid and shred pork.

Serve with chilli lime rice, burrito, beans, salsa or do a carnitas hash with a sunny side egg to top it off.

Keep watching this space for recipes for salsa, corn salsa and cilantro lime rice ala Chipotle.

By the way, this is definitely not an authentic way of cooking carnitas but it is a much, much healthier way.

I dream of it... Fast food Mexican style - it's healthy too if you skip the sour cream, chips and cheese. Anyways, when I heard that it was coming to Vancouver mid this year, I was over the moon and was disappointed when they postponed their opening ... but finally now they are open!!!

Even though we just got back from San Diego and LA and had Mexican food for almost a week, we checked Chipotle out today and at 1145am, the queue was already at the door and by the time we left at 12ish, the queue was out the door. Don't get put off by the queue, even though it looked long, it moved pretty quickly. There is plenty of space to sit and eat and even though the queue was long, the seating never really filled up.

I went with the buritto bowl and D had the buritto. First off, you get to choose between cilantro lime rice(there is a white rice version and a healthier version), we both choose the white rice one and we both went with Carnitas (Mexican version of pulled pork). You can choose from chicken, steak, barbacoa and a vegetarian version too. You also get a choice of pinto or black beans and the various salsas, cheese and sour cream. It was exactly as I remembered. A bit tangy, a bit salty, pork that just melts in your mouth. All D said was "YUMMM" and promptly devoured his burrito.

My only thought was the portion size was not as generous as in the US....perhaps they were trying to make the food last as one of the managers said that they might run out of food due to the overwhelmingly positive response to the opening and they were actively sourcing for more. Chipotle has their own guidelines when sourcing for food so I guess they can't just go to Costco to get more.

Whatever it is, I still dream of Chipotle and I'm so happy that I don't have to drive down to Seattle to satisfy my cravings :)

If you want to recreate Carnitas at home, it's very simple, click here for the recipe.

p.s All the Chipotle outlets are company owned and I think that is how they keep their food so consistent.

Crispy Salted Dark Chocolate Cranberry Oatmeal Cookie ....Now that's a real mouthful. A really yummy mouthful. After I took the first bite, I knew this recipe was a keeper! Crisp, chocolatey and buttery with a hint of salt....cookie heaven. However if you like your oatmeal cookies chewy, this is definitely NOT the recipe for you.

Adapted from Smitten Kitchen and Cook's Illustrated

1 cup AP flour
3/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp table salt
14 tbsp butter, slightly softned (198g or 1 3/4 sitcks)
1 cup sugar
1/4 cup packed light brown sugar
1 large egg
2 tsp vanilla extract
2 1/2 cup rolled oats
6 oz good quality dark chocolate, chopped (I used Callebaut)
6 oz dried cranberries
1/2 tsp sea salt ( I used pink sea salt or fleur de sel for sprinkling on top)

Preheat oven to 360 degrees. Link baking sheet with parchment paper. Whisk flour, baking powder, baking soda and table salt in a bowl.

Beat butter and sugars until light and fluffy. Scrape down bowl with spatula then add egg and vanilla and beat until incorporated. Scrape down bowl. Add flour mixture and gradually mix till just incorporated. Gradually add oats, dark chocolate and cranberries and mix till well incorporated.

Divide dough into 48 equal portions about 1 tbsp each. Roll between palms into balls then place on baking sheets about 1 1/2 inches apart. Using fingertips, gently press down each ball to about 3/4 inch thickness

Sprinkle a bit of sea salt on each cookie.

Bake until deep golden brown, about 13-16 min.

Transfer to wire rack to cool

The dough keeps well frozen too so if you want to make ahead roll dough into 1 inch diameter rolls. Cut into about 3/4 inch thickness and bake it for a bit longer if you take it directly out of the freezer.

After months of gorgeous weather, the rainy season is upon us again. Nothing better than a hot bowl of steamy noodles and soup for lunch. If you're working right by the library on Robson, Ramen Jinya is a good place to check out. It is a pretty small place so get there early to avoid a queue. It ain't as good as Hokkaido Santouka Ramen but it's pretty good, nearby and it's comfort food for me in cold weather.

D and I had gone for brunch on the weekend at Edible Canada previously and loved the food there so when we I took my mum to Granville Island, we decided to have a mid afternoon snack there. I was super disappointed with the food and the only thing that was good was the fries. The seafood in the soup wasn't fresh and the salmon fish and chips was soggy. My poor mum, she was looking forward to a good snack. Anyone else had a bad experience there or did I just go on an off day?

Harmony Arts Festival is back again running from Aug 3 - Aug 12. We went last year and thouroughly enjoyed ourselves so this year we went to check it out again. They have 2 stages with live music and lots of talented jewllery designers and artists showing their work. I'm also happy to say that they have added more food vendors this year so that there is a bit more variety :) Most of the vendors were the same as last year but they added a couple, the ones that caught my attention were Feastro, Faux Real and Holy Crepe.

We decided to try out Feastro the rolling bistro since it's been on our list of places to try like in forever. It seemed like that they had a more focused menu for the Harmony Arts Festival and didn't have the crab cakes that I had heard so much about.

Nevertheless, we ordered the fish taco - crispy chickpea battered Alaskan Cod, tomato/anise chutney, organic greens, tikka masala yoghurt topped with salsa and the jerk chicken taco which had tomato/anise chutney, organic greens, mango salsa and Aji Amarillo pepper aioli. Both tacos had so much going on but the flavours just meld together so well leaving you wanting more.

Those were our appetisers, now moving on to the main, we decided that we should have a hot dog. We already tried the Bavarian Smoky last year from Black Forest Deli as well as the one from Mangia E Bevi so we decided to try Dunn's hot dog topped with montreal smoked meat. Mmmm, after the hot dog I was super satisfied :) Tummy was extremely happy and though we were tempted by the crepes we decided to skip it. After all, our nieces and sis in law make one wicked crepe which I doubt they could beat.

For my mum and I, we took off to Tsawwassen and caught the 11am ferry to Swartz Bay. Check BC Ferries for more details. Not much line up as it was a weekday :) Mum usuallly gets seasick but the ferry was so stable she didn't need the seasick pills. The ferry ride over is quite picturesques and on a nice sunny day, it's nice to sit out on the deck. Sometimes you can even catch a talk about the marine life along the BC coast out on the deck.

Mum's very excited about Butchart Gardens, it's her 2nd time here and we spent 4 1/2 hours walking through. It was nice and leisurely and you really get to drink in all that beauty. Check out the photos.
What do you think?
