Sky on 57 is Justin Quek's foray back into the Singapore dining scene. Given his background, I was really looking forward to trying Sky on 57 at Marina Bay Sands. It is located on the highest point at MBS at the SkyPark and has a good view.
The decor is modern and minimalistic. We tried the set lunch, the executive set lunch and a main from the a la carte menu.
For the set lunch starters, we had the duck confit and the foie gras xiao long bao. How could I pass up a chance to eat foie gras together with xiao long bao? It is one of the signature dishes - on their own I love foie gras and xiao long bao but I can't say that I liked the combination at all. Give me just plain xiao long bao anyway.

For the mains, the fish was good but the beef was a touch dry even though we ordered medium rare.

I liked the desserts though, the home made ice cream had good flavour and a must if you like coffee. The fruits and sorbet was a good, light way to end lunch.

The black pepper lobster on the a la carte menu was done to perfection, tender, flavourful and the pepper sauce was not overpowering. The beef noodle from the executive set lunch was very tasty too, you can't really go wrong with wagyu beef can you?

Lastly. some macarons with our coffee and tea, very good flavour and a good Asian twist to it.

Would I come back again? Probably not but if I do, I'll have the lobster and the homemade vanilla ice cream with amaretto cream and coffee glaze and some of those Asian flavoured macarons too.
