Sweet Corn Soup

Sweet Corn Soup
It's corn season - walk into a supermarket and you'll see the piles and piles of corn. They are fresh and oh so tempting.  Just boiled or microwaved and they are delicious but in soup it's even better.  


Sweet Corn Soup
1 piece pork shank (cut into pieces)
500 ml water
500 ml chicken stock
1 carrot chopped
2 pieces corn (cut in half)

Bring water and chicken stock to a boil.
Put in the pork and carrot and simmer for about 1 1/2 hours.
Put in the corn after about an hour.
Serve hot.
