Bolognese Sauce

Bolognese Sauce with Chinese Noodles 
Go Canucks Go!!!  Am so happy that we won Game 1.

Anyways, I knew that today's game started at 5pm and I didn't want to be in the kitchen cooking dinner hence this simple one dish meal today.   I used chinese noodles as it cooks in 3 min - that I could do quickly between intermissions and not miss the game.  The chinese noodle is almost like capellini or angel hair pasta.  D didn't want the chinese noodle and cooked up some wholewheat pasta - yucks.   I served it in a bowl and ate with chopsticks and a chinese soup spoon - better to slurp up all that sauce.

2 tbsp oil
2 sticks celery 
1 onion 
1 small carrot 
2 cloves garlic 
300g ground beef 
300g ground pork 
200ml chicken stock or white wine (white wine definitely makes the sauce richer and has more depth)
2 tbsp tomato paste 
1 can diced tomatoes (28 oz) 
300g mushrooms sliced (optional)
3 tbsp cream 

Cut celery, onion and carrot or use a food processor to pulse to save time.  
Heat oil and cook celery, onion, garlic and carrot till soft but not brown -about 7-8 min. 
Stir in ground beef and pork and cook till not longer pink. 
Add tomato paste and mushrooms and stir. 
Add chicken stock and diced tomato with juice and simmer until sauce thickens - about 1 1/2 hr - 2 hr.
Add cream and salt to taste.
