Apple Cake

Since D & I both live to eat, we go to the gym regularly.  Actually more like D goes to the gym regularly and after the workout , he gets an apple.  As a reward for all his hard work, once we get enough apples, I bake an apple cake - seems fair enough right? Anyways, this recipe is fairly healthy don't you think?

Apple Cake - Keeps well in the freezer
2 cup sifted all-purpose flour
2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
100g butter or margarine, melted
1/2 cup packed brown sugar
1/2 cup white sugar
2 egg
2 teaspoon vanilla extract
2 cup chopped apple (I used 6-8 apples mix of green and red)
1 cup finely chopped walnuts, raisins or cranberries (optional)
1 tablespoons white sugar
1 teaspoons ground cinnamon

Directions
  1. Preheat oven to 350 degrees F (175C). Grease a 9x13 inch pan. Sift together flour, baking powder, salt, and 1/2 teaspoon of cinnamon; set aside.
  2. In a large bowl, mix melted butter, brown sugar, and 1/2 cup of white sugar until smooth. Stir in the egg and vanilla. Blend in the flour mixture until just combined, then stir in the apples and walnuts/raisins/cranberries. Spread the mixture evenly into the prepared pan. 
  3. In a small bowl, stir together 1tsp cinnamon and 1tbsp sugar; sprinkle over the top of the pan.
  4. Bake for 45 minutes.
  5. Cool in the pan, and cut into pieces.
